Why the Certificate of Analysis Is the Only Document That Matters
A vanilla bean Certificate of Analysis (CoA) is a third-party laboratory report that assigns measured numbers to every quality parameter in a batch. Marketing copy can claim anything. A CoA issued under AOAC Official Method 988.15 (AOAC, 2019) cannot.

Parameter 1 — Vanillin Content: The Most Critical Number
Vanillin is the primary flavour compound in Vanilla planifolia. AOAC Official Method 988.15 (AOAC, 2019) is the internationally accepted test procedure for quantifying it. Any CoA that does not reference this method or an equivalent (such as AOAC 995.25 for HPLC confirmation) should raise immediate questions.

ISO 5565 (ISO, 2019) specifies moisture requirements for vanilla bean grades. Grade A beans must fall between 30% and 35% moisture. Below 25%, beans are over-dried and will shatter during processing. Above 38%, mould risk during transit becomes unacceptable.
A CoA showing moisture outside the 30–35% window on a Grade A claim is a direct contradiction. Reject the grading, or request the supplier reclassify the batch to Grade B before purchase.
Moisture measurement method matters. Accept Karl Fischer titration or oven-drying per ISO 5565. Decline any CoA that states moisture without naming the test method — it signals an informal measurement.

Coumarin is a naturally occurring compound in some vanilla substitutes, particularly tonka bean. Its presence in a genuine planifolia CoA signals adulteration (Bythrow, 2005). European food law caps coumarin at 2 mg/kg in food products; a vanilla CoA showing any detectable coumarin disqualifies the batch from EU-destined sale immediately.
High ash content above 10% dry basis is a standard adulteration marker. Exhausted beans — those already extracted once — show elevated ash alongside collapsed vanillin numbers. Both signals appearing together on the same CoA confirm a fraudulent batch.
How to Verify a CoA Is Genuine — 5 Checks in Under 2 Minutes
Fraudulent certificates circulate in the vanilla trade. Dunphy et al. (2020) documented cases in which certificates were digitally modified to inflate vanillin figures before resale. The following 5-point check takes less than 2 minutes and catches the majority of falsified documents.
1. Accreditation number. Every legitimate laboratory carries an ISO 17025 accreditation code. Search it on the national accreditation body’s public register. No code means no accreditation.
2. Test method citation. The report must name AOAC 988.15, AOAC 995.25, or an ISO equivalent. Generic references to “internal method” are unacceptable for export-grade product.
